Ingredients 400 gr sweet potato, diced (or you can grate it if you don’t have a TM) 1 avocado 60 ml stewed apples ½ cup cacao powder 2 tbsp coconut flour 2 eggs ½ cup coconut sugar 1 tsp baking powder 1 tsp bicarbonate of soda 1 tbsp vanilla extract Icing 100 gr dark chocolate A dash of double cream
Instructions Preheat the oven to 185 C Place the sweet potato in the TM bowl, Speed 10, 15 seconds. Add the avocado and eggs and blend Speed 10, 30 seconds. Add the rest of the ingredients (cacao, coconut sugar, baking powder, bicarbonate of soda, coconut flour and vanilla extract) in the TM and blend Speed 8, 20 seconds. All the ingredient should be well mixed. Pour it into a brownie tin lining with parchment paper. Bake for 30 minutes.
For the icing: Melt the chocolate over a bain-marie. Add the double cream for smoothness (I added a dash really, maybe 20 ml). Spread over the brownie, once cooled. Enjoy!
