Ingredients (for 15 cookies)
100 gr dark chocolate (70%)
60 gr salted butter
50 gr brown sugar
50 gr light brown sugar
1 egg
75 gr self-raising flour
2 tbsp cacao powder
1/2 tsp baking powder
Instructions
Preheat the oven to 160°C.
Melt chocolate and butter over a bain-marie (simmering water).
Set aside and let it slightly cool down.
Mix sugar and egg for 5 min with the butterfly whisk in the TM.
Add the mixture of melted chocolate + butter.
Mix until well mixed.
Sieve flour, cacao powder and baking powder.
Take a tbsp of the mixture and place on parchment paper (about 5 per tray as they'll spread when cooking). You'll need 3 trays as I made 15 cookies.
Sprinkle with sea salt flakes (important as it'll bring the chocolate flavour to the next level. Trust me).
Bake for 12 minutes.
Remove the trays from the oven but let the cookies cool down completely as they'll be still very soft and unmovable at this stage.
But as they cool down, the crust will harden while the center will stay gooey (think brownie...). Enjoy!
If you don't have a TM, use a food processor or handheld mixer.
