Ingredients 1 cup of cashew nuts 3 cups of filtered water ½ tsp salt 1 squeeze of a lemon
2 tbsp maple syrup
Other flavours
1 tbsp of vanilla paste or extract for Vanilla Cashew Milk
1 tbsp of cacao/cocoa powder for Chocolate Cashew Milk
1 tsp of cinnamon for Cinnamon Cashew Milk
Instructions The night before: Soak the nuts with the water, salt and lemon. When you're ready to make the milk, rinse the nuts (this step is very important). You need to discard the water they've been soaking.
Place the soaked nuts in the Thermomix bowl, add 2 cups of fresh water, the maple syrup and blend Speed 10 for 30 seconds. Add the flavours at this step. You can also omit the maple syrup if you want an unsweetened milk. Transfer in a sterilised bottle and keep in the fridge. The milk will last a few days in the fridge.
The recipe can be easily made without a Thermomix. Simply use a powerful food processor.
What I like about cashew milk is that you don't need to strain it or discard the pulp once it's blended.
Its taste is very subtle. And you can make it thicker, thinner, sweeter according to your own taste by adding/removing water when you blend it.
