Ingredients
500 gr strong white flour
1 heaped tsp bicarbonate of soda
1 heaped tsp cream of tartar
2 heaped tsp cinnamon
125 gr butter, diced
25 gr sugar
1 egg, beaten
275 ml milk
sugar and cinnamon, to dust
Instructions
Preheat the oven to 180°C.
Sieve flour, bicarbonate and cream of tartar into the Thermomix bowl.
Add the butter and mix Speed 4, 10 seconds.
Add the rest of the ingredients and 2/3 of the beaten egg.
Knead on the Dough setting, 20 seconds.
Scrape the side of the bowl, and knead again 10 seconds on the Dough setting.
Turn the dough onto a floured surface.
Flaten roughly, cut into shapes.
The trick to get the scones to raise is to cut straight through the dough and slide the cutter sideway.
Place on parchment paper, brush with the leftover beaten egg, dust with sugar and cinnamon.
Bake for 10 to 15 minutes. Mine were ready after 13. Bon appétit !
The recipe can be done without the Thermomix.
Sieve the flour, bicarbonate and cream of tartar into a bowl.
Add the butter and rub into the mixture looks like breadcrumbs.
Add the other ingredients until the dough is combined.
Follow the rest of the recipe as mentioned above.
This recipe makes about 10 to 12 scones, depending on size of the cutter.
I got 4 big stars, 4 medium stars, 4 small stars and 7 round scones.
Lovely wam served with butter and jam or whipped cream and jam.
