Carrot, Cumin and Rosemary Loaf



Ingredients

250 gr self-raising flour 1 tsp baking powder 1 tsp ground cumin 60 ml olive oil 3 eggs 60 ml oat milk 1 large carrot, finely grated 1/2 cup of roasted sunflower seeds 1 sprig of fresh rosemary, stalk removed and chopped

Instructions Preheat the oven to 180ºC. Mix all the dry ingredients together but keep some sunflower seeds for later. In the TM bowl, place the eggs, oil, milk and grated carrot. Mix 10 seconds, speed 5. Add the dry ingredients. Mix 20 seconds, speed 3, scrapping the side of the bowl regularly to mix thoroughly. Transfer to a loaf tin (sprayed with coconut oil to avoid sticking).

Sprinkle the remaining sunflower seeds and bake for 45 minutes. Let it cool down before enjoying it.
