Vegan Mac & Cheese



Ingredients

Half a sweet potato

One carrot

150 gr cashew nuts

3 tbsp nutritional yeast

1 tsp garlic powder

250 gr Macaroni pasta

Instructions

Cook the pasta as per instructions on the pack.

Peel and boil the sweet potato and carrot until soft.

Keep some of the cooking water. You might need a bit to loosen the sauce.

Simmer the cashew nuts for 5 minutes (to soften them).

Place all the ingredients, except the pasta, in the TM bowl.

Mix 30 seconds, Speed 10 or until smooth.

If the sauce is very thick, add some of the cooking water.

The sauce should have a runny consistency, but still be thick enough to stick to the pasta.

Pour over the cooked pasta. Enjoy!

 

The recipe can be done without a TM. Simply use a normal food processor.

This recipe is enough for 3 people.
