Peanut Butter Granola

Ingredients 500 gr gluten-free oats (or jumbo oats) 1 tbsp coconut sugar 2 tbsp coconut oil 3 tbsp maple syrup 4 tbsp peanut butter (or almond butter, or cashew butter) 6 tbsp water 1 handful of cashew nuts (almonds, pecan nuts, brazilian nuts would work too) 1 handful of peanuts

Instructions Preheat the oven to 180°C.. Heat gently the coconut sugar, coconut oil, maple syrup, peanut butter and water together over a low heat until they are all nicely combined. At this stage, I blended the cashew nuts and the peanuts because my crowd don't like bits! But you can keep them roughly chopped. Mix the heated mixture with the oats and nuts. Cook for 30 minutes on 2 baking trays covered in parchment paper or silicon sheet. Turn the mixture every 10 minutes so it cooks evenly. Let it cool completely. Transfer in air-tight containers. At this stage, you can add extras: chocolates chips, raisins, etc.
