Ingredients
500 gr raisins
500 gr sultana
1 cup brown sugar
2 tsp lemon peel
2 tsp lemon juice
1 cup strong black tea
⅔ cup whiskey
4 eggs, slightly beaten
3 ½ cups flour
2 tsp baking powder
1 tsp ground cinnamon
1 tsp ground nutmeg
½ tsp all spices
Instructions
24H before you plan to bake it
Mix the fruits with the lemon juice, lemon peel, tea and whiskey and let it sit for 24H.
Stir it so often so all the fruits soak up the liquid.
The next day, preheat the oven to 150°C.
Fold the beaten eggs in the fruits mixture.
Add the rest of the ingredients and mix until it's all combined.
Divide into 2 baking loaf tins, lined with greaseproof paper,
Bake for 2 hours at 150°C0C.
Check after 1 hour ½ and cover with Tin foil if the top starts to burn.
Let them cool down and enjoy!
The brack will improve with time.
My advise: eat one straight away and keep the other one wrapped in tin foil or greaseproof paper for a few weeks for the flavors to deepen.
Great on its own or with butter and a cup of tea.
According to the tradition, you need to have a ring, a coin, a stick and a piece of cloth in the cake.
Wrap each of them individually in tin foil or greaseproof paper and fold into the mixture before baking.
Whoever gets the ring will marry within the year, the coin will get rich, the stick will travel and the piece of cloth will be poor :)
