Ingredients 200 gr dark chocolate 250 gr cooked and peeled beetroot (I used fresh one that I roasted in the oven first) 2 eggs (room temperature) 80 gr wholemeal flour
1/4 tsp baking powder 20 gr cacao powder
A handful of chocolate chips
Instructions Preheat the oven to 190ºC. Melt the chocolate over a bain-marie (over hot water) Place the cooked beetroot in the TM bowl and mix 10 seconds, Speed 10. Add the melted chocolate. Mix 10 seconds, Speed 8. Add the eggs. Mix 5 seconds, Speed 5. Add the flour, baking powder and cacao powder. Mix a few seconds until everything is blended and smooth. Transfer to a 22 cm baking tin lined with parchment paper.
Sprinkle with the chocolate chips Bake 15 minutes. Let it cool down a bit before cutting into 9 squares. Enjoy!
Keep for a week in the fridge.
The recipe can be done in a normal food processor.
