Square Energy Balls



Ingredients

60 gr cashew nuts, toasted

20 gr sesame seeds, toasted

80 gr dried apricots

20 gr cacao quinoa pops (you can also use puffed rice)

1 tsp cinnamon

2 tbsp raw honey

For the coating

3 squares 85% Dark Chocolate, melted

Instructions

Toast the cashew nuts and sesame seeds on a dry pan for a minute or two, until slightly golden.

Place them in the Thermomix bowl along with the apricots and the quinoa pops.

Blend Speed 5, 15 seconds.

Add the cinnamon and the honey. Blend 15 seconds, Speed 4.

Divide the mixture into 24 small balls or place them in a brownie baking tray.

Press the mixture firmly in the tray. Cut into square.

Let it set in the fridge for 15 minutes. Enjoy!

If you want to coat them in the chocolate, simply melt the chocolate over a pot of simmering water.

Dip the full bars or half the bars in the chocolate. Let it set. Enjoy!

 

The recipe can be done without a Thermomix.

Use a regular food processor.

The energy balls keep well in an airtight container in the fridge for a few weeks.
