Ingredients
For the Apple Filling
5 apples, peeled and diced quite small
1 heaped tbsp cornflour
1 ½ tsp cinnamon
2 tbsp maple syrup
For the Crumble
75 gr oats
75 gr wholemeal flour
1 ½ tbsp coconut oil, melted
2 tbsp maple syrup
For the Vanilla Cashew Cream
1 cup raw unsalted cashew nuts (I used a small cup)
1/3 cup water (Use the same cup as the one uas te
1 tsp vanilla extract
1 pinch of salt
1 tbsp maple syrup
For the Apple Filling
Preheat the oven to 180°C.
Mix the peeled and diced apple with the maple syrup, cornflour and cinnamon.
Place the mixture in a baking dish.
For the Crumble Topping
Mix all the ingredients and cover the apple mixture.
Transfer to the oven for 50 minutes.
Let it slightly cool down when done.
For the cream:
Place everything in the Thermomix bowl and blend until creamy. (You might have to scrap the sides of few times).
Serve with a couple of tablespoons of the Apple Crumble with the Vanilla Cashew Cream. Enjoy!
The recipe can be done without a Thermomix. Just blend the cashew cream in a normal food processor.
