Ingredients
90 gr cold butter 300 gr self raising flour 150 gr milk
50 gr butter, room temperature 50 gr brown sugar 3 tsp cinnamon peel and juice of 1/2 a mandarin
2 tbsp icing sugar 1 tbs (approx) water Peel and juice of 1/2 mandarin
Instructions Preheat oven to 210°C.
Place the cold butter and self raising flour into the Thermomix bowl. Mix on Speed 5, 10 seconds. Scrape down the sides of the bowl and repeat 2 more times. Mix on the knead function for 1 minute while you're pouring the milk. Sprinkle some flour onto a board. Roll the dough out into a 5 mm thick rectangle.
Wash the TM bowl and place the room temperature butter, brown sugar and cinnamon in it. Mix on Speed 4 for 20 seconds. Scrape down the sides of the bowl and repeat. Heat 37°C for 30 Seconds while you add the juice and peel of the 1/2 mandarin. The mixture should look like a paste now.
Spread it onto the dough. Roll the dough up into a tube (lengthways). Use a sharp knife to cut the roll into several pieces 12-14 pieces. Place the pieces cut side up into a greased tin (I used a 20 cm tin). Make sure the rolls touch each another as this will help them to rise. Bake for 25 minutes (check after 20. A skewer should come out clean). Let them cool for a few minutes before removing from the tin.
Mix the icing sugar and the water in a bowl with a spoon. Add the juice and peel of the other 1/2 of the mandarin. Drizzle over the buns. Bon appétit !
This recipe can be done with a normal food processor that has a dough attachment.
Just heat the sugar/cinnamon/mandarin in the microwave a few seconds to turn it into a paste before spreading it onto the dough.
