Lunettes à la confiture or Jam-filled Biscuits



Ingredients 300 g self-raising flour 100 g sugar 1/2 tsp vanilla paste 1 egg 3/4 tsp baking powder Jam (see recipe below) Icing sugar

Instructions Place the butter, sugar, vanilla paste and egg in the Thermomix bowl. Mix 30 seconds, Speed 4. Add the flour and the baking powder. Mix 30 sec, Speed 4. Reserve in the fridge for 1 hour.

Preheat the oven to 170°C. Roll the dough on a well-floured work surface and cut half with a full cookie cutter. Pair each full cookie with one where you have punched a hole in. Bake 15 minutes. Let them cool down completely and cover the cookies with a hole with icing sugar. Put a teaspoon of jam on each "full" cookie and cover with the one with a hole.

Store in an airtight container. Bon appétit !

 

I used the jam I made a couple of weeks ago.

Apple and Plum Jam

250 gr plums

100 gr apples

175 gr jam sugar

1/2 tsp ground cloves

1/2 tsp cinnamon

Mix the fruits and sugar for 10 seconds, Speed 10.

Cook 12 minutes at 100°C, Speed 3. Transfer to sterilised jars.
