No-Bake Vanilla Protein Balls



Ingredients 2 scoops of Vanilla Protein Powder 1 cup almond flour 1/2 cup almond butter (a small jar - 170 gr)

1 tsp vanilla paste 3 dates, soaked in hot water for a few minutes (or a squirt of honey) Optional:

1/4 cup chocolate chips (I used a mix of dark, milk and white chocolate)

Instructions Place the protein powder and the almond meal in the Thermomix bowl and mix Speed 5 for 10 seconds. Add the almond butter and mix again. Once the dates are soft, blend them into a pulp with a small blender ora food processor. It should be a sticky paste. Add a bit of water if needed. Add the date paste and the vanilla paste to the TM bowl. Mix Speed 5 for 20 seconds. If you're using honey instead of dates, just add it to the mix.

The batter should look like cookie dough. Add the chocolate chips and mix counterclockwise, Speed 3, 10 seconds. Take the equivalent of a tablespoon of the cookie dough and press it into the palms of your hands, until they ressemble little balls. Enjoy!

 

This recipe can be done without a Thermomix. A normal food processor would work. Once harden, the balls can be dipped in melted chocolate and rolled in cacao powder or dessicated coconut. The choice is yours!

If you make 20 small balls, you get over 3.5 gr of protein per ball for a minimal amount of sweetness. Small but mighty little protein balls!
