Ingredients 1 ¼ cup oat flour 1 ¼ cup strong white flour (or any wheat flour) 1 tsp baking powder 1 heaped tsp of cinnamon 1/2 tsp clove powder 1/2 tsp allspices 1/2 tsp salt 1/2 cup salted butter, at room temperature (roughly 75 gr) 1/2 cup dark brown soft sugar (roughly 75 gr is enough) 1 cup pumpkin puree 1 egg 1 1/2 tsp vanilla extract
100 gr dark chocolate, melted
Instructions Preheat the oven to 180°C. In a small bowl, mix the flours, baking powder, spices and salt. Set aside. Place the butter and sugar in the Thermomix bow,, Speed 5, 30 seconds. Add the egg, pumpkin puree, flour and vanilla, Speed 5, 1 minute (scraping down the sides regularly to make sure it's all until well combined). Line a baking sheet with parchment paper and scoop the cookies (about a golf ball size) onto the baking sheet. Bake for 12-15 minutes. Check after 12 minutes. They should be soft to the touch. Remove from the oven and let cool completely.
When they are cool down, cover the bottom with the dark chocolate for added magnesium ;-). Bon appétit.
The recipe can easily be done with a Thermomix. Simply cream together the butter and sugar, then add all the other ingredients until everything is well combined.
The recipe makes about 35 cookies.
