Healthy Waffles



Ingredients 1 pack of dry yeast 200 ml lukewarm water 200 gr oat flour 100 gr strong flour 1 tbsp icing sugar 2 eggs 1 tsp salt 1 tsp vanilla extract A handful of pearl sugar (optional) Instructions Place the water and dry yeast in the Thermomix bowl, 37 C, Speed 3, 3 minutes. Add all the other ingredients except the pearl sugar. Using the dough mode, mix 3 minutes. Let the dough sit in the bowl for 2 hours. After the 2 hours, transfer the dough in a mixing bowl. Add the handful of pearl sugar and mix gently. The pearl sugar is not necessary but it caramelised as the waffles cook and it gives a lovely crunch. Warm the waffle maker and brush with a bit of butter. Place a generous tablespoon of dough on each waffle mould. Cook for 3 minutes. Serve warm with icing sugar, chocolate spread, vanilla ice-cream... the choice is yours! Bon appétit !

 

This recipe can easily be done without the Thermomix. Warm the water, add the dry yeast and let it sit for 5 minutes. Add all the ingredients and kneed the dough for 5 minutes. The, continue as the recipe as above. The recipe works well with regular wheat flour. Just put 200 gr of any wheat flour.
