Lemon and Poppyseeds Pancakes



Ingredients

100 gr oat flour

100 gr organic strong flour

220 ml milk

2 eggs

1 tbsp sugar

2 tsp baking powder

2 tbsp of poppyseeds

Zest of 1 lemon

Instructions

Place everything in the Thermomix bowl in the following order:

flours, baking powder, sugar, poppyseeds, lemon zest, milk and eggs, Speed 5, 30 seconds.

Place the TM bowl in the fridge for 15 minutes.

Heat a pan with a bit of coconut oil (or butter), remove the excess of oil/butter with a paper towel.

Pour a tablespoon of the batter (or more depending of the size of the pancake you want) in the pan.

Cook for 2/3 minutes until golden brown on both sides.

Stack the pancakes, drizzle with lemon juice and maple syrup. Bon appétit !

 

This recipe is very loosely adapted from a recipe from Donal Skehan.

It can easily be made without a TM. Simply place all the ingredients in a food processor and proceed to get a smooth consistency.
