Ingredients
50 gr coconut oil
50 gr maple syrup
100 gr oats
50 gr of mixed seeds (sesame, pumpkin and sunflower)
One small handful of goji berries
2 squares of dark chocolate
1 tsp water
Instructions
Preheat the oven to 180°C.
Place the mixed seeds in the Thermomix bowl and grind Speed 10, 10 seconds.
Reserve in a bowl.
Without cleaning the Thermomix bowl, melt the coconut oil with the maple syrup gently 37°C, Speed 3, 2 minutes.
Add all the other ingredients, Speed 3, 1 minute.
Place in a mould lined with parchment paper.
Bake for 20 minutes.
Cut while hot, then let them cool completely.
Place the chocolate and water 20 seconds in the microwave. Whisk to get a shiny glow.
Throw the melted chocolate with a spoon onto the bars. Bon appétit !
This recipe is very forgiving. Add more or less of seeds, more or less goji berries.
I find if you grind the seeds, the bars hold themselves together better.
As long as you keep the ratio, they'll turn out ok everytime.
Thrown in a handful of chocolate chips for added magnesium benefit!
They can be made in small moulds too so you don't have to cut them. If you place them in smaller moulds, check the cooking after 12 min so they don't burn.
