Ingredients
200 ml milk
65 gr butter
1 sachet of dried yeast
50 gr caster sugar
375 gr plain flour
¼ tsp salt
4 tbsp of pearl sugar (optional, it's for the look rather than the taste)
1 egg, beaten
For the filling
65 gr soft butter
45 gr sugar
1 tbsp (heaped) of cinnamon (or more, depending on taste)
Instructions
Place milk and butter in the Thermomix Speed 1, 37°C, 2 to 3 minutes.
Add the sachet of dried yeast Speed 1, 37°C, 2 minutes.
Add the flour and sugar to the milk, butter and yeast mixture.
Mix on the dough mode for 5 minutes.
Transfer the dough in a floured bowl, cover with cling film and let it rise for 45 minutes to 1 hour. While the dough is working its magic, prepare the filling by melting the butter in the microwave and adding the sugar and cinnamon until you get a smooth paste.
Once the dough has risen, preheat the oven to 220°C.
Take the dough on a floured worktop, punch it down (very therapeutic) and roll it to a rectangle shape with the longer side face you.
Spread the filling evenly on the dough.
From the long side going away from you, roll the dough so you get a long thin sausage.
Slice the sausage into as many pieces as you like, starting in the middle and halving the dough everytime.
I made about 20 buns with my one but you could easily only make 12 bigger ones. Whatever size you fancy.
Place the buns on parchment paper (or silicone sheet) on your baking shelf on their side, so the cinnamon snail effect is face up.
Coat them all with the beaten egg and sprinkle pearl sugar (totally optional. If you don't have any, don't worry. It won't affect the taste).
Reduce the heat to 190˚C and bake the buns for about 15-20 minutes or until they turn golden brown.
Best eaten warm. Bon appétit !
This recipe can be easily done in a food processor. Just heat the milk in a saucepan on a low heat. Once you've added the flour and sugar to the milk, you'll need to knead the dough for 5 minutes by hands on a floured worktop. Transfer the dough back to the bowl and cover with fling film. You can replace the beaten egg with milk. The sugar/butter/cinnamon ratio is really up to your taste. I usually add 2 heaped tablespoons of cinnamon, because we love the taste in this house !
