Mandarins and Almond Cake - Gluten-free



Ingredients

5 mandarins

200 gr almond powder

60 gr sugar

6 eggs

½ tsp baking powder

Instructions

Place the mandarins with their skins in a saucepan, cover with water and cook them for 2 hours. Check regurlarly to make sure there is water in the saucepan. Let them cool down for a while.

Preheat the oven to 200°C.

Place all the ingredients and the mandarins in the Thermomix bowl and mix for a few minutes.

Transfer to a baking tin and bake for 45 minutes.

Serve warm with a scoop of vanilla ice-cream or a dollop of yogurt. Bon appétit !

Also delicious cold.

 

This recipe can be done easily without a Thermomix. Simply blend everything in a food processor once the mandarins are cooked.
